MILTON'S LITE AND TASTY AND
MOIST CHICKEN
 
4 chicken breast fillets
Italian flavored bread crumbs
2 eggs
Pam or other type of spray oil
1 lg. can fruit cocktail, in own juice
1 bottle light Russian dressing
Grated cheese or Parmesan cheese
Seasoned salt and pepper

Clean and wash chicken breasts; season as desired. Beat eggs; dip chicken in the egg batter. Roll each fillet in bread crumbs until covered. Spray oil onto skillet and brown both sides of fillets.

Place fillets in a Corning Ware baking dish. Pour on drained fruit cocktail and light Russian dressing. Grate cheese over mixture. Cook at 400 degrees for 1/2 hour. Serve with vegetables and bread. They will be very moist and each fillet will have less than 300 calories.

Kind of expensive but not hard to make for someone who hates to cook. The chicken was moist and the flavors were deliciously different. I left off the cheese and baked it at 375°F for 40 minutes. What I don't like is how many dishes it takes to prepare - 1 for the egg, 1 for the bread crumbs, 1 pan to brown and 1 baking dish.
