OPEN-FACED CUCUMBER SANDWICHES 
24 very thin slices good white bread
Mayonnaise or Durkee dressing
24 slices hard-cooked egg
24 slices cucumber
24 capers or 24 rolled anchovies

Spread bread with mayonnaise or dressing. Cut in rounds with a biscuit or canape cutter. Each round should be slightly larger than an egg or cucumber slice. Place a slice of cucumber and a slice of egg on the bread and top with a caper or rolled anchovy. Serve as soon as possible, before bread becomes soggy.
