OPEN FACE CHEESE SANDWICH 
Swiss, Emmental or Natural Gruyere or Jarlsberg cheese
8 pieces toasted white bread
Dry white wine
thinly sliced tomatoes
Melted butter
Paprika
8 slices tomatoes, optional

Preheat oven to 400°F.

Place toast on baking sheet and lightly brush with white wine and then with melted butter. Lay cheese slices on toast and sprinkle with paprika.

Place a slice (or two, depending upon size) of tomato on top of each sandwich.

When cheese has melted, remove from oven and serve with salad.

Yield: 8 open face sandwiches.
