APPLE NUT BREAD OR CAKE | |
1/2 c. shortening 3/4 c. brown sugar (packed) 2 eggs 1 1/2 c. coarsely chopped apples (about 2 med. size) 3 tbsp. milk 2 c. flour 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/4 tsp. ginger 1/4 tsp. nutmeg 1/2 tsp. cinnamon 1 c. chopped walnuts Raisins, optional Mix shortening until it is creamy. Add sugar, beat well. Add eggs one at a time and beat after each. Add milk and apples (stir in by hand). Sift together flour, baking powder, soda and spices. Add nuts to flour mixture. Then add flour mixture to shortening. Pour into greased pan. LET STAND 20 MINUTES. Bake 45-50 minutes, test at 45. Flavor will improve if let stand overnight. One regular bread pan, or two small 7 1/2 x 4 1/2. Can freeze. |
