BREAKFAST BURRITOS 
2 med.-lg. potatoes, sliced
1 sm. can chopped green chilies
3/4 c. oil
Salt & pepper to taste
1 sm. onion, chopped fine
1 lb. pork sausage
1 doz. eggs
Flour tortillas

Fry the potatoes and onions in oil until brown. In another skillet at the same time, crumble the sausage and brown. (Both of these can be prepared the night before if you're not an early riser!)

Break the eggs in separate bowl and whisk until yolks are broken. In a large skillet combine the potatoes and onions, sausage and let heat thoroughly, add green chilies and eggs. Stir constantly so that eggs will scramble. When they are done, spoon into flour tortillas. This will make approximately 30 fajita size burritos, or 20 larger ones. May be served with hot sauce (picante sauce)
