CRISPY FRENCH FRIED ONION RINGS 
2 sweet Spanish onions
1 c. pancake mix
3/4 c. beer
Oil for deep frying heated 375 degrees
Salt

Peel onions and cut into 1/2 inch thick slices, separate into rings. Combine pancake mix and beer to make a smooth thick batter. Dip onion rings in batter and fry a few at a time in hot fat until golden brown. Drain on absorbent paper lined baking sheets. Keep fried onion rings hot in oven until all rings are fried.
