BLACK BEAN SOUP 
1 lb. black beans
10 c. water
1 lg. green pepper
2/3 c. olive oil
1 lg. onion
4 garlic cloves
1 lg. green pepper
4 tsp. salt
1/2 tsp. pepper
1/4 tsp. oregano
1 bay leaf
2 tbsp. sugar
2 tbsp. vinegar
2 tbsp. cooking wine
2 tbsp. olive oil
Chopped onion

Wash and soak beans overnight. Discard water, add 10 cups water plus green pepper. Cook until tender. In food processor process on chop next 4 ingredients. Place these in a small pan and saute. Add the processed pepper, onion and garlic to the black beans.

Add next seven ingredients and simmer on low for at least 1 1/2 hours or until slightly thickened. Just before serving add olive oil, and finely chopped onion.
