PA PA'S CHICKEN & DUMPLINGS 
CHICKEN:

1 med. size chicken or hen
1/2 can cream of chicken soup

DUMPLINGS:

4 lbs. all purpose flour or 3 lbs. flour & 1 lb. rice flour
2 eggs
1/2 can cream of chicken soup
1 tbsp. salt
1 tbsp. black pepper
2 c. chicken broth

Boil chicken or hen in cream of chicken soup and water until meat is tender.

In 4 quart mixing bowl, make ducks's nest with flour. Combine eggs, salt, pepper and cream of chicken soup and pour into center of flour. Stir together, adding chicken broth a little at a time. Continue stirring until mixture is thick enough to turn out onto a floured surface. Knead until smooth and elastic. Roll dough approximately 1/8" thick. Let set 10 minutes then cut into strips about 1" wide and 4" long. Drop into boiling chicken broth. Serves 12. These are wonderful.
