GERMAN POTATO SALAD 
6 medium potatoes
1/2 cup onion, chopped
1/2 cup white vinegar
1 cup water
6-8 slices bacon
2-4 tbsp. flour
2 tbsp. salt
1/4 cup sugar

Boil potatoes until fork tender. (Remove skins either before or after cooking).

Fry bacon and drain off drippings; add to saucepan.

With bacon drippings that were left in the skillet, add onion and cook until transparent.

In saucepan, add water, vinegar, and sugar; bring to boil. Reduce heat, add bacon and onion, then whisk in flour, cooking until sauce thickens.

Taste, then add salt as desired, allow to cool with burner off. Take potatoes and either cube or mash them to the desired consistency, then add sauce and let stand until saturated.

Serve warm.
