TABOOLIE (MID EASTERN PARSLEY
SALAD)
 
3 bunches parsley
2 med. size ripe tomatoes
1/2 c. broughol (wheat germ)
4 green onions
Juice of 1 fresh lemon
2 tbsp. olive oil
1 clove of garlic
Salt and pepper

Wash parsley thoroughly, remove stems, finely chop, and place in a large salad bowl. Dice tomatoes and add to parsley. Soak bourghol is enough water to cover for 2 hours, squeeze out water and add to parsley. Dice green onions, chop the garlic and add. Squeeze fresh lemon over the salad, sprinkle the olive oil over all, add salt and pepper to taste, and toss well. Serve with pita bread or Romaine lettuce leaf. Enjoy!
