CREAMED BEETS 
1/2 c. sugar
1/4 c. vinegar
1 tbsp. cornstarch
1/4 c. beet juice
1 can beets, drained
2 tsp. butter

Mix sugar, vinegar, cornstarch, and beet juice. Boil for 5 minutes. Remove from heat. Add beets and 2 teaspoons butter. Blend well.
