HERBED VEGGIE COMBO (For
Diabetics)
 
1/2 c. frozen green beans
4 oz. sliced zucchini
2 tbsp. chopped green peppers
1 tbsp. chopped onion
2 tsp. vegetable oil
1/2 c. chopped tomato
Dash salt and pepper
1/8 tsp. each rosemary and thyme

Steam vegetables (beans 10 minutes - add zucchini - steam 10 minutes more).

In saucepan cook onions and peppers in oil over medium heat. Stir in tomatoes and spices and heat. Pour over beans and zucchini. Toss gently to mix. Cal. 75, Chol. 0, Food exchange: 1 vegetable and 1 fat, 1 cup each. (2 servings)
