ORANGE PECAN DIABETIC COOKIES 
1/4 c. shortening
1 egg
2 tsp. Sucaryl or Sweet 10
6 tbsp. frozen unsweetened orange juice, thawed
1 c. sifted flour
1/4 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla extract
1/4 c. chopped pecans

Combine first 4 ingredients with 2 tablespoons water in bowl, mixing well. Blend in combined dry ingredients. Stir in vanilla and pecans. Drop by teaspoonfuls onto greased baking sheet. Bake at 375 degrees for 12-15 minutes or until lightly browned.
