BAKED SEAFOOD SCAMPI 
1 1/2 lb. sole (or other flatfish)
1/2 lb. medium shrimp, peeled, deveined, and cut in half
1/2 lb. scallops, chopped
2 tbsp. butter
1 clove garlic, minced
1 carrot, finely chopped
1/2 cup bread crumbs
1/2 tsp. fresh thyme
Parmesan cheese, for sprinkling
1 tbsp. chopped fresh parsley, for garnish

Preheat oven to 400°F.

Sauté or microwave 2 tablespoons butter, garlic and chopped carrot for 2 minutes. Set aside.

Grease glass dish (approximately 8x12-inch). Line bottom with half of the fillets.

Mix bread crumbs, thyme, halved shrimp and chopped scallops with sautéed mixture. Spread on top of fillets.

Cover with other half of fillets. Sprinkle grated cheese on top.

Bake at 400°F for 20 to 25 minutes or just until tender.

Since microwave ovens vary in power, you may need to adjust your cooking time.
