“FISH CROQUETTES” IS IN:

FISH CROQUETTES 
2 1/2 cups boiled, mashed potatoes
1 cup flaked fish (cooked)
1 egg, beaten
1/2 cup chopped green onions
3 cloves garlic, minced
2 tablespoons chopped fresh parsley
2 tablespoons flour
vegetable oil for frying
seasonings

Mash potatoes or put through a potato ricer. Season to taste with a little salt, pepper, garlic powder and onion powder. Add fish, onions, minced garlic, egg, parsley and a little Tony Chachere's hot pepper seasoning. Use an ice cream scoop or your hands to make 2 inch balls; roll balls in flour to coat well.

In a deep fryer or Dutch oven heat oil to 370°F. Fry in hot oil until golden brown, turning once. Drain on paper towels, season to taste with salt and pepper while hot.

Serve.
