BAKED SALMON WITH VEGETABLE
DRESSING
 
1 (5 lb.) piece of salmon
Salt and pepper
1 (1 lb.) pkg. soda crackers, crushed
3 lg. carrots, ground
1 c. celery, diced
1 lg. onion, diced
1/2 c. chopped parsley
1/2 c. bacon drippings or butter
1 tsp. sage
1 tsp. thyme
1 tsp. marjoram
2 eggs

Remove backbone from salmon. Salt and pepper fish and lay aside. Combine remaining ingredients, 1/2 teaspoon salt and 1/2 teaspoon pepper, stuff salmon. Bake in 350 degree oven for about 1 hour and 30 minutes. Yields 10 to 15 servings.
