MOCK APPLE PIE (RITZ CRACKER
PIE)
 
Prepare pie crust for a double 9 inch crust. Crumble:

32 Ritz crackers into bottom crust in coarse pieces

Set aside. Simmer for 15 minutes:

2 c. sugar
2 c. water
2 tbsp. cream of tartar
1 tbsp. grated lemon
Rind
2 tbsp. lemon juice

Cool. Pour over crackers. Sprinkle with cinnamon and dot with butter. Apply top crust. Bake at 425 degrees for 30 minutes.

I've never baked pies before but I thought I'd try this for work during one of our "potluck days" we have. Only a couple people knew the secret and everyone else thought I had used real apples. Two people thought I used canned apple pie filling. Some of my coworkers had two pieces and everyone told me how great the pie was. I went to the store and bought Pilsbury premade pie crust to help me out.
