MOCK APPLE PIE (RITZ CRACKER PIE) | |
Prepare pie crust for a double 9 inch crust. Crumble: 32 Ritz crackers into bottom crust in coarse pieces Set aside. Simmer for 15 minutes: 2 c. sugar 2 c. water 2 tbsp. cream of tartar 1 tbsp. grated lemon Rind 2 tbsp. lemon juice Cool. Pour over crackers. Sprinkle with cinnamon and dot with butter. Apply top crust. Bake at 425 degrees for 30 minutes. |
