RITZ CRACKER APPLE PIE (EA) | |
2 c. water 1 1/2 c. sugar 2 tsp. heaping cream of tartar 22 whole Ritz crackers (24 makes firmer pie) Juice of 1 lemon Cinnamon & nutmeg to taste Crust enough to make a 2 crust pie. Combine water, sugar, cream of tartar and bring to a full rolling boil. Drop in the crackers. Let boil for 2 minutes. (After this boiling the crackers swell up and when the pie is cut they look like slices of apples.) When they have boiled remove from heat and let cool. Add the lemon juice and turn the mixture into a crust lined pan. Handle the crackers gently and don't stir them. Then sprinkle with nutmeg and cinnamon; cover with a top crust. Bake 25-30 minutes until brown in hot oven at 425 degrees. The filling will be juicy when put into the crust but when baked it will be clear and just exactly right. |
