CHICKEN-FRIED STEAK 
1 1/2 lbs. beef top round steak
1 beaten egg
1 tbsp. milk
1 c. finely crushed saltine crackers
1/4 c. cooking oil

Pound beef to 1/4 inch thickness; cut into serving size pieces. In a bowl mix egg and milk. Dip meat pieces in egg mixture, then in crushed crackers. In a skillet brown meat in hot oil; turn once. Cover; cook over low heat 45 to 60 minutes. Makes 6 servings.
