POLYNESIAN CHICKEN | |
1 can (10 3/4 oz.) chicken broth 1/4 c. red wine vinegar 2 tbsp. steak sauce Pinch of dry ginger 1/4 c. thinly sliced green pepper 9 pieces Kentucky Fried Chicken 2 tbsp. soy sauce 1 can (8 oz.) pineapple chunks (undrained) 1/4 c. brown sugar 2 tbsp. cornstarch 1 pkg. (6 oz.) frozen Chinese pea pods In medium pan combine all ingredients except chicken, green pepper and pea pods. Cook until thickened, arrange chicken in shallow baking dish. Pour sauce over all and sprinkle with green pepper. Cover tightly with foil. Bake in preheated oven for 20 minutes. Remove from oven, place pea pods over chicken. Cover and return to oven for 20 minutes longer. Serve over bed of rice. Serves 6. |
