Very good meatloaf, only thing I used 2 cans of tomato sauce because I had a 2 1/2 lb chopmeat. Thank you for this meatloaf recipe...

What a great recipe! Lends itself to what you might need (for lack of having on hand) or a new twist with an additional/different ingredient. Tastes great with red/green bell peppers and onion. I also add a limited amount of salad olives instead of salt. Don't forget to balance out wet and dry ingredients.
Kudos to Lisa Edmonds! You have made me a culinary star in my dining room!

I find it is better to cook the onions until they are soft before adding them to rest of the mixture.

This is one of the best recipes I've ever eaten.... So I picked up some ex lean ground beef 90% fat free. Now i have to get out the old pressure cooker and can some meat loaf. We can have meat loaf sandwiches any time we want. :-) Handy!!!

Instead of the BBQ type topping I wrap my loaf in bacon.

I too was hoping that one of the comments would say what kind of cheese. I seem to remember making one with cottage cheese. I was thinking maybe mozzarella. Anybody, anybody?!?!?!

I doubled my recipe on this due to all the great reviews. I was afraid that I would throw most of this meatloaf away. I didn't use a loaf pan I used a 9x13-inch pan to bake mine in and needless to say there was nothing to throw away all of it was eaten and the pan was almost licked... lol. I don't care for meatloaf but I love this recipe and will be making it again. You should try it cause it really is the BEST MEAT LOAF EVER! ENJOY!!!

I also used a finely shredded cheese (it was Colby Jack). After baking you really can't tell that cheese is an ingredient you could use most any kind. I would recommend using one that is shredded fine. I hope this helps you! Happy cooking!

This is the only meatloaf recipe that I have used a second time. It is excellent! I did change the topping using catsup instead of tomato sauce and added a dash of worcestershire sauce. Highly recommend!

Almost rated this 3 stars because last night the meatloaf itself was only good. My husband didn't care for it at all because the "tomato sauce topping" was too sweet & I had to agree. I halved the meatloaf recipe & even made the sauce with less brown sugar than called for. However, I made a cold sandwich for lunch today & found that the tomato sauce topping really enhanced my sandwich. It is definitely the best ever, "next day-cold meatloaf sandwich" I've had. The meat held up very well when slicing for sandwiches, too!

I've made so many meatloaves over the decades, but never found "the one" until now. I used sharp cheddar. This is an excellent meatloaf.

I ditched the recipe I used for my family for years in favor of this one. I'm alone now and no longer have to feed growing boys so I made it and cooked it in muffin tins. I have it in the freezer and can have it whenever I want. The only thing I changed was the topping. Too sweet for me and I didn't have any tomato sauce so I used ketchup and not so much brown sugar. VERY GOOD. Thanx Lisa

I added chopped green pepper about 1 1/2 teaspoon A-1. For cheese... use Colby Jack shredded. It is like a little stronger version of Cheddar. Pepper Jack would also be great in this.
