STIR FRY BEEF AND VEGETABLES | |
2 tbsp. oil 1 lb. lean tender beef, cut into 1/4 inch thick slices 2 tsp. sugar 8 scallions, sliced lengthwise 1/2 lb. fresh mushrooms, cut lengthwise 1 can water chestnuts, sliced thin 1/2 lb. fresh spinach 2 tbsp. soy sauce Rice Heat oil in skillet over high heat. Stir in beef and sugar. Stir fry until meat is no longer pink. Add onions and mushrooms. Cover and steam one minute. Uncover and stir fry 40 seconds. Add spinach. Cover and steam 30 seconds. Uncover and add soy sauce and water chestnuts. Stir fry until spinach is tender. Serve over rice. A great party dish. Arrange ingredients on a large platter and refrigerate. Prepare dish at table-side to add to the pleasure of your guests. |
