STIR FRY BEEF & VEGETABLES 
1 lb. lean beef (sirloin or top round), thinly sliced
1/2 c. soy sauce
1 c. mild onions, thin sliced
1 c. celery, sliced diagonally
2 c. broccoli flowerets
2 c. broccoli stems
12 mushrooms, sliced
1/4 c. vegetable oil
2 sm. cloves garlic, minced
1 tbsp. cornstarch
1 med. tomato, peeled

Place beef and soy sauce in bowl. Cover and marinate 30 minutes. Prepare vegetables. Set aside. Heat oil in wok or wide frying pan over low heat. Add garlic and saute over high heat. Add drained beef, stir fry until meat is cooked. Add onions, celery, broccoli and mushrooms. Cover and steam 5 minutes. Mix marinade and cornstarch. Heat to boiling. Serve over rice.
