SKILLET SHEPHERD'S PIE 
If using an iron skillet you can omit the casserole dish and broil right in the skillet!

1 1/2 lb. ground beef
1 medium onion, chopped
2 cloves garlic, minced
1/2 cup water
1 env. taco seasoning
8 oz. shredded cheese, divided (2 cups)
3 cups mashed potatoes (prepare in advance)

In a large skillet, cook meat, onion, and garlic over medium heat until the meat is thoroughly cooked. Stir in water and taco seasoning; heat through. Stir in 1 cup of cheese.

Pour meat into medium casserole dish. Combine mashed potatoes and remaining 1 cup cheese; spread over beef.

Broil 4 to 6 inches from heat for 5 or 6 minutes or until the top of the potatoes is golden brown.
