HOT PINEAPPLE DISH 
6 tbsp. pineapple juice
6 tbsp. flour
1 c. sugar
2 (20 oz.) cans chunk pineapple, well drained
2 c. grated Cheddar cheese
1/2 c. butter
1 c. Ritz crackers

Mix first 3 ingredients together; add pineapple and Cheddar cheese. Pour into greased casserole. Melt butter and mix with Ritz crackers that have been rolled into crumbs. Put crumbs on top.

Bake in a 350°F oven for 40 to 45 minutes. Herb and I enjoy this very much. I have prepared it many times for potlucks, and it may be used for brunches, lunches or dinners. The recipe was given to me by a good friend.
