ZUCCHINI AND GARLIC 
1 lb. (2 2/3 c.) zucchini, cut into thin slices
2 cloves garlic, finely chopped
2 tsp. finely chopped fresh ginger
1 shallot, finely chopped
3 tbsp. basic Chinese vegetable stock
1 tbsp. low salt soy sauce
1 tsp. corn flour
Freshly ground pepper

Stir fry zucchini, garlic, ginger, and shallot in non-stick frying pan with the vegetable stock for 3 minutes. Mix soy sauce and corn flour. Add to frying pan. Simmer for 2 minutes. Season with pepper and serve.
