GARLIC SHRIMP 
1 lb. fresh jumbo shrimp
1 pt. half and half
Flour
1 c. olive oil
1 c. vegetable oil
1 egg yolk
Juice of 1/2 lemon
1/2 c. butter
2 cloves garlic, minced
Parsley & chives, chopped

Preheat oven to broil. Clean and devein shrimp and soak in cream for 10 minutes. Drain and dredge in flour. Saute in oils over medium heat for 5 minutes. DO NOT TURN. Remove shrimp and place on baking sheet in preheated oven and broil for 5 minutes.

FOR SAUCE: Mix egg yolk and lemon juice in heavy saucepan. Add half of butter and stir over low heat until melted. Add garlic and remaining butter. Stir briskly until butter melts and sauce thickens. Add chives and parsley. Pour over shrimp and serve. 4 servings.
