KARA'S PARMESAN GARLIC PASTA 
1/2 (1 lb.) box Vermicell1 spaghetti
1/2 cup chopped green, red, yellow peppers
1/4 cup chopped onions
olive oil
2 cups shredded Parmesan cheese
3 cloves minced garlic
garlic powder
salt and pepper
1 lb. pre-cooked bite-sized chicken or shrimp (optional)

Boil water for pasta with pinch of salt and splash of olive oil. Grease or spray an 8x8-inch baking dish (glass works best) with olive oil, set aside.

Sauté chopped vegetables with olive oil in frying pan over medium heat until slightly tender.

If adding chicken or shrimp: heat saucepan with high sides to medium-high heat, adding olive oil and minced garlic. Add pre-cooked chicken or shrimp to brown, adding garlic powder, salt, and pepper to taste.

Drain cooked Vermicelli and return to cooking pot. Stir sautéed vegetables, Parmesan cheese, and chicken or shrimp into pasta. Transfer into greased baking dish, press to form.

Bake in 350°F oven for about 5 to 10 minutes to set.

Remove from oven, cut into squares, and serve with wine or juice.

Warm french bread or garlic bread is an excellent side for this dish. Enjoy!
