“GREEK LEMON-RICE SOUP” IS IN:

GREEK LEMON-RICE SOUP 
3 cups chicken broth
2 to 3 oz. uncooked regular rice
2 eggs
3 tbsp. lemon juice
dash of salt
dash of white pepper

In 2-quart saucepan, bring broth to a boil. Reduce heat, add rice, cover and simmer until rice is tender, about 20 minutes. In small bowl, beat eggs and lemon juice. Stirring constantly, add 1 cup of hot soup, a little at a time. Stir mixture into soup in pan and heat. Do not boil! Season with salt and pepper. Serve immediately.

Note: 2 oz. rice makes thinner soup; 3 oz. rice makes thick soup. Weight instead of measurement gives the option of using medium grain rice.

Serves 4.

I grew up in an area loaded with greek resturants and loved this soup growing up, having moved away 7 years ago, I craved it, decided to find a recipe and I FOUND IT, this is exactly what Lemon Rice Soup is supposed to be!!! Black pepper is fine.

This is a GREAT recipe! Very easy and simple. I first had this soup at a greek restaurant and the recently stopped making it. I had a taste for it, and this recipe was just right. No meat needed, however you can add a can of chicken breast by Swanson to give it a kick!

Very good, very easy! I doubled everything, used max amount of rice and boiled two chicken breasts, cubed, while I cooked the rice. Black pepper works just as well.

Great soup! I added roasted barbecue chicken to it and added lemon pulp and a little more lemon juice.
