GREEK STYLE FLOUNDER WITH LEMON
RICE STUFFING
 
2 lb. flounder fillets
1/2 c. vegetable oil
5 tbsp. lemon juice
1/2 tsp. mustard
1 clove garlic, crushed
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. oregano

Combine all ingredients except fillets for marinate. Place fish in a shallow dish and cover with marinate. Refrigerate 1 hour. Place fish over rice stuffing and bake uncovered at 350 degrees for 30 minutes.

RICE STUFFING:

3/4 c. chopped celery
1/2 c. chopped onion
1/4 c. oil
1 tsp. paprika
1 tsp. salt
3 c. cooked rice
1/3 c. sour cream

Cook celery and onion in oil until tender. Add remaining ingredients. Place in greased baking dish.
