SOUTHERN MACARONI SALAD | |
My grandmother made this from having an abundance of tomatoes, cucumbers and onions in the summertime. She served with fried chicken. Its seems plain but everywhere I take it people rave over it. Sometimes simple things are some of the best! 1 (16 oz.) pkg. elbow macaroni 1 Vidalia onion, chopped 3 tomatoes, diced 3 cucumbers, peeled and diced Hellman's mayonnaise salt and pepper Wash and drain macaroni. Refrigerate macaroni until it is completely cold throughout. Dice onion, tomatoes and cucumber and toss with macaroni, Hellman's mayonnaise and salt and pepper. Refrigerate again for several hours before serving. Diced tomatoes are best added in just before serving. Submitted by: LJR |
