BANANA OAT BRAN BREAD | |
1 1/4 c. oat bran 1 c. flour 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1/2 tsp. cinnamon 1/2 c. corn oil 1/4-1/2 c. brown sugar 1 tsp. vanilla 2 egg whites 3 ripe bananas, mashed 1/4 c. nonfat milk 1/4 c. raisins 1/4 c. chopped dates Nuts (opt.) Coat 9"x5" loaf pan with oil or non-stick vegetable spray. Dust bottom and sides of pan with 1/4 cup oat bran. Set aside. Place corn oil in bowl and add brown sugar, beating until sugar is mixed well with oil. Add all other ingredients except raisins, dates and nuts; mix well until blended. Add raisins, dates and nuts and mix. Pour into prepared pan. Smooth top evenly with rubber spatula. Bake on center shelf of oven at 350 degrees until toothpick inserted in center comes out clean, about 40 minutes. Remove from oven and invert pan onto wire rack to release loaf. Turn loaf upright and let cool. |
