BANANA OAT BRAN BREAD 
3/4 c. sugar
3 mashed ripe bananas, 1 1/2 c.
3/4 c. vegetable oil
2 eggs
1/2 c. flour
1 1/2 c. oat bran
1 tsp. baking soda
1/2 tsp. baking powder
2 tsp. vanilla

Mix sugar, bananas, oil, and eggs together. Sift together dry ingredients and add; add vanilla. Bake in greased and floured loaf pan for 60-70 minutes in 350 degree oven. Cool 20 minutes before inverting. Tastes great and is healthful, too.

These come out great in mini loaf pans. It made 11 minis. I would NOT add sugar next time.(I only used less than 1/2 cup.) I shredded 1 apple with peel instead and they were absolutely delicious and moist.
