BANANA BREAD WITH OAT BRAN 
1 1/2 sticks butter
3/4 c. sugar
2 whole eggs
1 egg white
3 ripe med. bananas
3 tbsp. lemon juice
2 1/4 c. flour
3/4 c. oat bran
3/4 tsp. baking soda
1/2 tsp. salt

Preheat oven to 350 degrees. Butter and flour 9 x 5 inch loaf pan. In a large bowl cream the butter with the sugar. Add the whole eggs and egg white, one at a time, beating well after each addition. Medium bowl mash bananas with lemon juice. Stir mashed bananas into butter mixture.

In another bowl mix flour, oat bran, baking soda and salt. Stir the dry ingredients into banana mix until just blended. Scrape batter into prepared pan. Bake 1 hour or until top of loaf is slightly brown. Let cool before slicing. Can also, add chopped walnuts, your choice.

Made this recipe exactly as described, except I added the juice from a whole lemon (didn't measure out 3 tbsps. of juice)and added the zest as well. I added about 1/2 cup chopped walnuts and a few sprinkles of cinnamon. It turned out awesome! Very moist and not too heavy like alot of banana breads can be. Will definitely be making this one again!
