TENDER CHUNK HAM AND SPINACH
QUICHE
 
1 (9 inch) deep dish unbaked pie shell
2 (7 x 4 inch) slices Swiss cheese
1/2 c. chopped spinach (drained)
1/2 c. sliced mushrooms
3 eggs, beaten
1 c. half and half
1/2 tsp. salt
2 tsp. flour
1 can tender chunk ham (flaked apart)
1/2 c. shredded sharp Cheddar cheese

Place Swiss cheese slices side by side in pie shell; sprinkle evenly with spinach and mushrooms. Set aside. In small mixing bowl mix the eggs, half and half, salt and flour. Pour over spinach and mushrooms; sprinkle evenly with flaked ham and top with Cheddar cheese. Bake 45 minutes at 350 degrees. You can substitute 1/2 cup chopped broccoli in place of spinach.
