QUICHE LORRAINE A LA RITZ 
9 inch unbaked pie shell
1 onion, chopped
1 tbsp. butter
1/2 lb. fresh mushrooms, sliced
1/2 to 1 c. ham, cooked and chopped
1 1/2 c. Swiss cheese, chopped
4 eggs, beaten
1 c. cream
1 c. milk
salt, pepper
Dash nutmeg
1/2 pkg. frozen spinach, thawed

Saute onion and mushrooms; line in bottom of uncooked pastry. Add chopped ham and cheese. Beat eggs; add milk, seasonings and pour over ham and cheese. Drain spinach; put in four corners of the pie. Bake at 350 degrees for 45 minutes or until set. Serve at once.
