SUPREME QUICHE LORRAINE 
Pastry for 1 pie crust
1 tbsp. butter, softened
6 slices bacon, crumbled
1/2 c. diced ham
1/2 c. thinly sliced mushrooms
10 oz. pkg. chopped spinach, thawed and drained well
4 eggs
2 c. heavy cream
1/8 tsp. nutmeg
Salt and pepper to taste
1 c. Swiss, shredded

Prepare and roll out pastry. Place in 9-inch pie plate. Spread crust evenly with softened butter; chill. Sprinkle pie crust with bacon, ham, and mushroom. With wire whisk beat eggs, cream, salt, pepper, nutmeg, and spinach. Stir in cheese.

Pour into crust. Bake at 425 degrees for 15 minutes. Reduce heat to 325 degrees. Bake 35 minutes more. Let stand 10 minutes before serving.
