QUICHE LORRAINE 
1 (9 inch) unbaked pastry shell
8 slices bacon, diced
8 oz. Swiss cheese, shredded
1 tbsp. all-purpose flour
1/2 tsp. salt
Dash ground nutmeg
3 beaten eggs
1 1/2 c. milk

Bake unpricked pie shell at 450 degrees only 5 minutes. Remove pie shell from oven and reduce oven to 325 degrees. Cook bacon, drain and crumble. Reserve 2 tablespoons crumbled bacon, place remaining bacon in partially baked pie shell. Add shredded cheese. Combine flour, salt, nutmeg, egg and milk. Pour over bacon and cheese in pie shell. Trim with remaining bacon. Bake about 35 to 40 minutes at 325 degrees. Let cool 10 minutes.
