STEVE'S BAKED CHICKEN CROQUETTES 
Easy to make!

1 (20 oz.) pkg. ground chicken (I buy Perdue brand at Walmart)
2 sleeves Ritz crackers (I use wheat)
1 cup Doritos (any flavor)
1/2 cup packaged Italian salad croutons
1/2 cup dried-chopped onions (rehydrated)*
1/4 cup garlic powder or minced garlic

Note: For the onions, can use 10 to 15 packs of Heinz minced onions found at gas stations near the ketchup and mustard.

Crush 1 tube of Ritz crackers, Doritos and croutons. Best way: place in gallon sized Ziploc bag, let out all air and wack bag on a flat surface with a rolling pin, till it becomes small pieces, remove the air, keep crushing, it becomes a fine powder.

Add onions, garlic and ground chicken. Mix thoroughly. Mixture will be very moist. Crush 2nd sleeve of Ritz, pour powdered Ritz into a wide mouthed shallow bowl or large plate.

Roll a ball of about 1/2 cup of chicken mixture into the Ritz mix, pressing the crumbs into the chicken dough and form something that resembles a Hershey's kiss, or a diamond that fell from a ring (pointy on top and round on bottom).

Pour about 1/4 cup of olive oil onto cookie sheet and wipe around with napkin. Place the croquettes onto oiled surface. Place in 400°F oven for about 1/2 hour, uncovered. Keeping eye on them, since ovens can vary. Will be golden brown when done.

Place on plate, pour a hot poultry gravy over it (Heinz) serve with smashed potatoes and enjoy!
