MARINARA SAUCE | |
1/2 c. fresh basil leaves 1/4 c. fresh Italian parsley leaves 1 rib celery 3 cloves garlic 1 tsp. (or more) fresh ground pepper 1 medium onion, quartered 2 tsp. dried oregano 2 cans Hunts tomato sauce WITH TOMATO BITS or 8 fresh tomatoes, chopped in processor (a can of tomato paste will be needed as a thickener at the end of cooking) Chop all ingredients in food processor, except oregano and tomato sauce (or tomatoes). Scrape down sides until finely chopped. Place in 2 quart bowl with high sides. Place in microwave for 2 minutes on high (if using stove, place 1 tablespoon olive oil in saucepan and add mixture; heat for 3 to 5 minutes). Add tomato sauce. Stir well. Heat in microwave (covered and vented) on high for 6 minutes, stirring every 2 minutes. (If using stove, simmer for 10 to 12 minutes, stirring often. Add oregano and 2 teaspoons of sugar. Simmer in microwave for 1 minute (or simmer 3 minutes on stove). If using fresh tomatoes, add can of tomato paste after adding oregano. Stir well and heat as indicated above. Serve over hot pasta and sprinkle with grated Parmesan cheese. Extra sauce freezes well or can be kept in refrigerator for a week to 10 days. |
