MARINARA SAUCE 
1/2 c. olive oil
4 c. chopped onion
2 sm. carrots, sliced
4 cloves garlic
8 c. canned Italian plum tomatoes (2 lg.)
Salt & pepper
2 tsp. dried oregano & basil (each), fresh basil

Combine all ingredients except herbs. Cook until vegetables are soft. Put through a sieve. Return sauce to pan. Add salt and pepper and herbs. Simmer for about 30 minutes (or use 2 large jars of store bought).
