POTATO PANCAKES 
5 med. potatoes (2 c. grated)
1 tbsp. grated onion
1 egg, well beaten
1 tsp. salt
2 tbsp. flour
Shortening for frying

Pare potatoes, grate into mixing bowl. Quickly add onion, eggs, salt, and flour. Heat shortening in a large skillet over medium heat about 2 minutes. Drop potato mixture by tablespoon into hot shortening. Fry until golden brown and crisp on one side; turn and flatten pancakes with spatula. Continue frying to brown other side. Drain on paper towels. Serve with applesauce if desired.
