POTATO PANCAKES 
4-6 potatoes, peeled
1/4 c. grated onions
1 tsp. salt
2 eggs, lightly beaten
Flour
Oil for frying

Grate potatoes. Stir in onions, salt, and enough flour to thicken (1-2 tablespoons). Put oil in large frying pan or griddle. When the oil is hot (medium flame) spoon in batter; form pancakes. Leave space between pancakes. Pancakes should brown in 5 minutes on one side, then turn over and brown the other side. Serve with sour cream or applesauce.
