EASY JIFFY CORNBREAD SALAD 
2 (8 oz. ea.) boxes Jiffy cornbread mix
1 large tomato, diced
1 cucumber, diced
small onion, diced
1 large green pepper, diced
mayonnaise

Bake cornbread mix according to package directions and cool. Crumble in a large bowl. Add tomato, cucumber, onion and green pepper to the cornbread and mix. Stir in enough mayonnaise to moisten the mixture. Refrigerate overnight before serving.
