RAMEN NOODLE SALAD 
1 (3 oz.) pkg. Ramen noodle soup mix
1/4 cup butter
1 cup walnuts or pecans, chopped
1 (16 oz.) pkg. fresh broccoli florets
1 head Romaine lettuce, torn
4 green onions, chopped
Sweet & Sour Dressing

Remove seasoning packet from Ramen noodles and reserve for another use. Break noodles into pieces. Melt butter in a large skillet on medium high heat. Add Ramen noodles and nuts and sauté until lightly browned. Drain on paper towels.

Toss together noodle mixture, broccoli, lettuce, and green onions in a large bowl. Add 1/4 cup of Sweet and Sour Dressing, tossing to coat. Serve with remaining dressing.

Sweet & Sour Dressing:

1/2 cup vegetable oil
1/4 cup sugar
1/4 cup red wine vinegar
1 tbsp. soy sauce
1/2 tsp. salt
1/4 tsp. pepper

Whisk together oil and remaining ingredients.
