MEXICAN CORNBREAD PIZZA 
We really love this recipe and make it for family gatherings!

1 lb. ground beef
1 jar Chi-Chi's chunky salsa (or your favorite)
1 can sliced black olives, drained
1 sweet onion, sliced
1 green pepper, chopped
mild jalapenos
small pkg. smoked ham
2 boxes jiffy cornbread mix
8 oz. shredded Mozzarella cheese (for sprinkling)

Brown hamburger and drain, add salsa and mix cooking on simmer for 5 minutes. Remove and set aside.

In the bottom of 8-inch baking pan, place olives, onion slices, green pepper, jalapenos, ham, and hamburger mixture. Prepare cornbread as directed on package and pour over mixture. Bake at 350°F until cornbread is done.

Remove from oven, place a large serving dish over pan, and flip. Let set for a couple of minutes to make sure all the hamburger mixture has left pan. Remove baking pan and add Mozzarella cheese to top and return to oven until cheese has melted.

Note: This mixture can be doubled and baked in a larger pan for more guests.
