MEXICAN MEAT LOAF 
1 1/4 lb. ground beef
1 (10 oz.) can Ro-tel tomatoes, chopped
3 tbsp. chopped onions
Season with pepper to taste
1 1/2 c. bread crumbs
1/4 carton Egg Beaters
1 tsp. salt
1 c. lowfat Mozzarella cheese

Preheat oven to 375 degrees. Mix together beef, tomatoes, bread crumbs, egg, onions, salt and pepper. Spray pan with Pam and form loaf of mixture and place in baking pan and bake 1 hour.
