MEXICAN MEAT LOAF 
1 1/2 lbs. lean ground beef
1 sm. can evaporated milk
1/2 c. fine dry bread crumbs
1/4 c. chopped onion
1 slightly beaten egg
1 tsp. garlic salt
1/2 tsp. salt
1 (8 oz.) can refried beans
2 oz. Monterey Jack cheese

Combine the ground beef, milk, bread crumbs, onion, egg, garlic salt and salt well. Press 2/3 of the mixture into an 8 1/2 x 4 1/2 x 2 1/2 inch loaf dish, forming a 1 inch depression with a 3/4 inch wall around the edge. Spoon the refried beans into the center. Seal the remaining meat mixture over the beans. Bake at 350 degrees for 55 minutes. Drain off the fat. Melt 2 ounces of cheese over the top. Serve with salsa.
