APRIL'S SOUTHERN SWEET POTATO
PIE
 
This is a family favorite at my house during the holidays!

2 deep dish pie crusts
4 cups mashed fresh red sweet potatoes
1 cup white sugar
1 cup brown sugar
1/2 cup (1 stick) unsalted butter
3 eggs
1 tsp. vanilla flavoring
2 tsp. lemon flavoring
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
1 cup heavy whipping cream
pinch salt
2 tbsp. self-rising flour

Preheat oven to 350°F. Boil sweet potatoes until done. Prick pie crust with a fork and bake covered for 10 minutes.

In a large mixing bowl blend all pie filling with a mixer and add pie filling to both pie crusts.

Bake at 350°F for 30 to 40 minutes or until toothpick comes out clean. Cool and serve.

Makes 2 pies.
