RED CABBAGE 
All amounts are approximate as it depends on the size of the head of red cabbage.

1 small head cabbage or 1/2 large cabbage
1 med. onion, chopped
1/2 to 3/4 stick butter
1 tbsp. granulated sugar
2 tbsp. brown sugar
1 to 2 tbsp. lemon juice
2 to 3 tbsp. vinegar
salt and pepper, to taste

Saute onions in butter. Place all ingredients in a baking dish and mix well. Cover the dish and bake at 350°F about 1 1/4 hours. After 45 minutes, stir and taste the cabbage. Adjust seasonings as needed and continue baking.

This is surprisingly easy and delicious. I either chop my cabbage or run it through the shredder on my stand mixer. I use all 3 tbsp. of the cider vinegar, lemon juice, etc. All my friends who have tried it LOVE IT!
